\u00a0This class will\u00a0equip you to:\u00a0\u00a0make an educated guess as to when an old layer in your backyard is past her prime as an egg producer, to catch and kill her humanely,and then to cook the bird expertly. \u00a0After the class, you will be glad that the old hen is no spring chicken.<\/p>\n

Following a farm tour of our poultry houses which show permaculture design principals, \u00a0we will demonstrate \u00a0a humane kill, de-feathering and a hand evisceration which harvests the extremely nutritious organs such as liver, heart , feet and \u00a0giblets.<\/p>\n

We hope each student will \u00a0have a go at all \u00a0parts of the process , hence the limit of 6 students.
\nThe chicken carcass will be prepared \u00a0for the pot. \u00a0As we butcher our hens,\u00a0two\u00a0will be simmering in the style of\u00a0coq au vin<\/em>\u00a0for our\u00a0lunch. We will show you how to create a wonderful chicken dish\u00a0\u00a0based on bone broth , so rich in minerals essential for our \u00a0bone density and dental health. The exceptional raw dairy and vegetable produce of Merri Bee Organic Farm will fill out our meal. We believe your time and money to attend this class \u00a0 will be\u00a0repaid many fold\u00a0\u00a0to you \u00a0over the years in delicious , cheap and nutritious meals .<\/p>\n<\/div>\n

Thus equipped with the knowledge to harvest and cook a hen ( rooster or hen of any age really), you go home with the hen you butchered and various recipesfor\u00a0slow cooked chicken. Each venerable hen \u00a0should provide \u00a0your family with at least 2 excellent meals at virtually no cost.
\nWe do remember being very scared of this whole process and assure you it gets much easier as you begin to concentrate on the skills involved. Mastering \u00a0these \u00a0benefits the \u00a0hen in your hands and keeps your backyard poultry operation financially prosperous. As every farmer has to learn, there are very few \u00a0pets on a farm.\u00a0.\u00a0If you keep fowls even just for eggs, the truth is that \u00a0sometimes for humane reasons we need to know how to put a creature \u00a0“out of its misery” swiftly.<\/p>\n

This day \u00a0will run \u00a0from 9.30 \u00a0to 4 pm on a day to be decided by the group,in school \u00a0term 3, \u00a02014.<\/p>\n
